Whenever Tom and I go on vacation, I
tend to eat a whole lot of “whatever the heck I want”. You can be sure to find
us sampling everything from sweet treats to local brews. Thankfully, calories don't count when your on vacation. If only right? In an attempt to keep our
eating habits somewhat healthy, I like to pack homemade snacks. And our trip
to Canada called for something extra special…
Dark Chocolate and Coconut Oatmeal
Bars
If you’re looking for something sweet
to eat that’s also healthy and filling, then these are for you. Coconut Oil
replaces butter. Rolled Oats and Whole Wheat Flour keep you full and give
you fuel. Plus some good dark chocolate to curb that sweet tooth.
Ingredients:
2½ cups old fashioned oats
2 eggs
1 cup flour
1 cup whole wheat flour
1 cup brown sugar
1 cup melted coconut oil
1 tbsp vanilla extract
1 tsp baking soda
½ tsp salt
10 oz dark chocolate chips

Directions:
Set oven to 350 degrees
Line a 9X13 pan with parchment paper
Mix all ingredients
Flatten mixture evenly into baking pan
Bake for 25-30 minutes
These are perfect for snacking and breakfast on-the-go.
